The cooler weather means more fun baking in my house, a much more enjoyable task when there are no flies or 40+ degree Celsius temperatures to have to contend with.
A firm favourite in my house are Rocky Road Clusters, and the best thing is, they are slightly different each time, depending on what is in the house.
The basic recipe is this…
250g chocolate, melted
250g marshmallows, chopped into bits
Candy bananas, chopped into chunks
Mix it all together, dollop onto a tray lined with baking paper, and set in the fridge. No point in telling you how long they keep for, as there are never any left over!
Sometimes we add a few tablespoons of peanut butter to the melted chocolate. Sometimes we add crushed up Clinkers to the mix. At Christmastime we add red and green M & Ms and broken up pretzels.
Any way you mix it, the end result is always the same, yummy!
You cannot beat a rocky road! So easy and quick to make – I love the look of this xx
