Chocolate Peppermint Slice

This week for his home-school Home Ec lesson, Wyatt made both a baking item, and a cooking item. He chose to make a Chocolate Peppermint Slice as his baking item, and a meatloaf and vegetables as his cooking item.

This chocolate slice recipe has been in my family for over twenty years, God, typing that makes me feel old lol! I would happily share my meatloaf recipe with you as well, but it changes every time I make it, depending on my mood and what’s in the fridge!

Wyatt also made some multi coloured heart shaped meringues last week, the photos are below as well.


1 cup self raising flour

1/2 cup raw sugar

1/2 cup desiccated coconut

1/4 cup cocoa powder

125g butter, melted

For Icing

Queen peppermint essence, to taste

3 cups icing sugar

1/4 cup cocoa powder

Queen sprinkles, to decorate


  1. Mix all dry ingredients in a bowl.
  2. Make a well in the middle, add melted butter.
  3. Bake at 180 degrees Celsius for 20 minutes.
  4. While slice is baking, mix icing sugar, cocoa and peppermint essence in a bowl. Add boiling water in small amounts, until icing is thick and flowy.
  5. Ice slice while it is hot, straight from the oven. Decorate with sprinkles immediately. Place in fridge until icing is set.
  6. Cut into squares and enjoy!
