Choc Orange Cupcakes

I love to bake, especially cakes and cupcakes, which is ironic as I loathe eating cake, I am more of a caramel pie kinda girl.

Today I thought I would share my go to cake recipe with you, it is versatile, and simple to make.


125g butter

3/4 cup caster sugar

1 teaspoon vanilla essence

2 eggs

2 cups self raising flour

1/2 cup milk


Beat butter, vanilla and sugar until light and fluffy.

Add eggs, mix thoroughly.

Add flour, alternating with the milk.

Bake at 180 degrees Celsius for 15 minutes.

Allow to cool before icing.


For my choc orange cupcakes, divide the batter into two bowls. Add 1/4 cup cocoa to one bowl. Add red and yellow (or orange) food colouring and some orange essence to the other bowl. Then place spoonfuls of each mixture into the cupcake cases, in a random fashion. Once full, use a skewer to swirl the batters together before baking.

If you want a plain chocolate cake, add 1/4 cup cocoa to the mix.

If you want a rainbow cake, divide the batter into smaller bowls, and add a different colouring to each bowl. Then just spoon the various batters into the cake pan and use a skewer to swirl the batters around before baking.
