This week I made delicious chocolate orange lamingtons, simple to make, quick to disappear.
For the cake, you will need:
3/4 cup raw sugar
1/3 cup milk
1 1/2 cups self raising flour
1 tablespoon Queen orange essence
1 teaspoon Queen red food colouring
1 teaspoon Queen yellow food colouring
For the icing, you will need:
4 cups icing sugar
1/2 cup cocoa
2 cups boiling water
4 cups of desiccated coconut in a shallow tray
Cream butter and sugar.
Add eggs, mix.
Alternatively add flour and milk, mix.
Add essence and food colouring, mix.
Pour into a shallow rectangle or square cake pan.
Bake at 180C until cake springs back.
Cool cake completely, overnight is best.
Prepare icing mixture.
Cut cake into square or rectangle pieces, whatever size you desire.
Using two forks, dip each piece of cake into the icing mix and allow to soak for a few seconds, turning to coat all sides.
Using the forks, carefully roll the cake pieces in the coconut, then transfer to a baking paper lined tray to set.
Store in an airtight container.
